Nothing beats boiling up the weekend beef bones to form a light soup today's was with added ginger, coriander, soya sauce, red peppers and spring onions. Very quick to prepare and highly nutritious. For fear of losing this delicious recipe, I am making a note of it here. Having tried a few cookie creations during the lockdowns, these definitely win the votes (obviously there aren't many people voting!) I've made these in a muffin tray because my children pinched my baking tray at the crucial moment for their bears' picnic. 🐻 They at least look neater like this. #cookies #farmshop
You will need to mix the following:
85g ground almonds/spelt flour/flaked almonds
100g rolled oats
30g dark chocolate chips
3/4 tsp baking powder 🥄
1/4 tsp sea salt 🥄
70g brown sugar or coconut sugar 🥥
1 egg 🥚
32g almond butter or any nut butter.
Cook for 9-12 minutes in the oven. Makes 6 cookies - naturally, I recommend a double batch! Will keep in an airtight container for 5 days, (but not if you have the farmer in your larder 🚜)!
